Kitchen Workout 4b: Peanut Cookies

Good things come in pairs and since it’s still Chinese New Year, I have decided to do my good deed for the year and share another CNY goodie. This is easy peasy, a vast difference to the previous post on pineapple tarts. I bring you… peanut cookies. “Heh?” I hear.. “What’s so great about peanut cookies?” Well, these are balls of crisp yet crumbly peanut goodness, salty yet sweet, and for all peanut butter fans out there, this is a sure crowd-pleaser. The best part, only 5 ingredients are needed to create this delicious, delectable, melt-in-the-mouth treat.

Ingredients:

300g roasted salted peanuts
225g plain flour, sifted
120g castor sugar
100-150ml vegetable oil
a handful of peanuts
1 egg, beaten

Method:

  1. Place the 300g peanuts into a processor and blend until fine
  2. In a large mixing bowl, combine ground peanuts, flour and sugar and mix well
  3. Pour 75ml of oil into the flour mix and stir with a large wooden spoon
  4. Drizzle more oil in, in small amounts, until the mixture comes together and a ball can be rolled between palms without crumbling
  5. Scoop a teaspoon of peanut mixture and roll between palms to form a ball. Repeat and lay them out on a lined baking tray
  6. Press a halved peanut onto the ball. Repeat for the remaining balls
  7. Brush each ball with the beaten egg wash
  8. Bake at 180 degrees for 18-20 minutes, or until golden
  9. Place on a cooling rack
  10. Resist eating all in one sitting

These were so easy to make that I whipped up a second batch in barely over 30 minutes the second time round. I experimented with a quarter of the batch and replaced the half peanut with a dark chocolate chip. Not only did the chip retain its shape, the modified cookie tastes awesome. The combination of peanut butter and chocolate can’t go wrong! And The Angmoh tried to help get them cookies out of the oven and squished one by accident. Long live thy cookie, you shall be remembered (and devoured).

  1. I was scrolling down, thinking “If only there was some chocolate..” and lo and behold it appeared! Chocolate and peanuts are quite possibly my favourite sweet combination. Love that these can be easily vegan-ified too.

    Zomg yummy! You guys are so awesome for making CNY treats. I keep saying I want to get around to it every year but never have the time to do it what with all the heavy cooking for CNY meals. Maybe next year haha
