Super Bowl Pho and Bun Bo Hue

Bun (pronounced boon) refers to long thick vermicelli noodles, as opposed to flat rice noodles used in pho. The broth in bun bo hue is spiced with chilli and lemongrass and the fresh vegetable garnish consists of shredded purple cabbage, bean sprouts and mint.
Fakebooo has a strong stomach for offcuts and offal while I’m a sissy when it comes to innards, so it was the combination for him and sliced beef and beef ball for myself.
The bun bo hue at Super Bowl is delicious. The noodles are not overcooked and retain a good bite and the all-important soup is slurp-worthy. Good depth is achieved from simmering beef bones and spices and the fragrance of lemongrass enhances the wondrous aroma. The chilli provides a hot spicy kick, making the soup tantalisingly addictive. I highly recommend throwing in the chopped mint, it adds a wonderful lift to the already flavoursome soup.
Fakebooo’s dish was authentic, complete with the use of hock, congealed blood and shank. I especially love the beef balls, they were peppery, sweet and packed with flavour.
Super Bowl has got me fallen for their bun bo hue hook, line and sinker. I may very well attempt their Superbowl portion on one extremely hangry day.
